Being a south indian there is no need to say that I am a big fan
of rice. I keep experimenting and can make any rice in a jiffy. I will share
all the rice varieties in the coming weeks, but here is one that is amazingly
simple and you don’t need many ingredients for this. I like to keep it simple
and simple this is. So happy cooking…
Ingredients:
Cooked Rice - 1 Cup
Baby corn - 100 gms
Spinach - 100 gms
Spring Onions - 3-4 stalks
Cumin Powder - 1/2 tbsp
Pepper Powder - 1/2 tbsp
Cloves - 3
Cumin Seeds - 1 tsp
Garlic - 2 pods
Chilli powder - 1/2 tbsp
Salt to taste
Oil - 3 tbsp
Method:
For baby corn rice
Add chopped garlic and spring onion bulbs to oil |
Add baby corn and fry for a minute |
Add dry spices and mix well |
Add cooked rice and spring onion greens and mix well |
First for baby corn rice, in a pan/kadhai put 1 1/2 tbsp of oil
on a medium flame. Add finely chopped garlic and spring onion bulb(finely
chopped) and saute for a minute. Now add chopped baby corn and fry for a minute.
Now add cumin powder, pepper powder and salt. After 3 minutes add half of the
cooked rice and mix well. Now add the spring onion greens and give it a final
stir.
For Spinach rice:
In a pan add oil, cumin seeds and cloves |
Now add spinach puree, red chilli powder |
Now add cooked rice |
Adjust seasoning and mix well |
For Spinach rice, first blanch the spinach leaves and puree. In
a kadhai/pan put the remaining oil and add cumin seeds and cloves. After they
splutter, add spinach puree, red chilli powder and cook it for 2 minutes. Now add the remaining
rice, adjust seasoning and mix well.
Now for presentation, layer baby corn rice and spinach rice
alternatively and serve hot.
