Palak Paneer

This is an all-time favourite dish of mine. Very easy to make and of course nutritious. I always have paneer stored in fridge because my husband is a very fussy eater when it comes to vegetables. When I don’t know what to cook, I make paneer and everybody is happy 
So here is my version of Palak paneer… Happy Cooking 


Ingredients:
Palak/Spinach – 400 gms
Paneer/Cottage Cheese – 200 gms
Tomato – 1
Onion – 1
Ginger – ½ inch piece(Julienned)
Garlic – 6-8 pods
Green Chilli – 2
Cumin /Jeera – 1 tsp
Oil – 1 tbsp

Salt – as required

Method:

Make a puree of blanched spinach, green chillies, garlic,
tomato and keep it aside                     
In a pan heat oil and add cumin seeds.
Once they splutter, add chopped onion and sauté.
Add the spinach puree and cook for 5-8 minutes

Add cottage cheese cubes and adjust seasoning








Wash spinach leaves thoroughly in running water and blanch it. Now make a paste of the blanched spinach, green chillies, garlic, tomato and keep it aside. In a pan heat oil and add cumin seeds. Once they splutter, add chopped onion and sauté it for 2 minutes in medium flame. Now add the spinach puree and mix well. Cook it for 5-6 minutes and add cottage cheese cubes. Season it with salt and give a couple of minutes.
Garnish it with julienned ginger and cream. Serve it with hot phulkas.
