Brown Rice Biryani with Beetroot Raita

I love one pot meals. Its easy and whenever I am feeling lazy this is the best way out. However, I make sure that its tasty as well. This one in particular is one of my favorites as it is made with brown rice. So enjoy cooking ...


Ingredients:
For Biryani

Brown Rice – 1 Cup(soaked for 1 hour)
Veggies – 1 cup(cauliflower, carrot, beans, potatoes)
Whole garam masala – cloves, cardamom, shahjeera
Ginger garlic paste – 1 tsp
Green Chilli - 1
Ghee – 1 tbsp
Salt and water as required

For Raita

Curd – 1 cup
Beetroot – ¼ cup(grated)
Sugar – ½ tsp
Salt – 1 tsp
Red Chilli Powder – ½ tsp

Garnishing:


Corriander leaves

Method:

Add whole garam masala, ginger garlic paste and green

chilli to the ghee
Add all the veggies, rice, water and salt and let it cook until done

Wash and soak brown rice for 1 hour. In a cooker, add ghee. Add whole garam masala, ginger garlic paste and green chilli. Now add the vegetables and let it saute for a minute. Now add the rice and add 2 cups of water. Add salt per taste. Now close the lid and let it cook for 15 – 20 minutes.

Note:

Do remember that brown rice will take a little longer than normal rice. 

Add sugar, salt, red chilli powder in the curd
Add grated beetroot and mix well
 

For raita, add the above mentioned ingredents and mix well.

Garnish with corriander leaves.


Serve hot brown rice biryani with raita.
