I love one pot meals. Its easy and whenever I am feeling lazy this is the best way out. However, I make sure that its tasty as well. This one in particular is one of my favorites as it is made with brown rice. So enjoy cooking ...
Note:
Do remember that brown rice will take a little longer than normal rice.
Ingredients:
For Biryani
Brown Rice – 1 Cup(soaked for 1 hour)
Veggies – 1 cup(cauliflower, carrot, beans, potatoes)
Whole garam masala – cloves, cardamom, shahjeera
Ginger garlic paste – 1 tsp
Green Chilli - 1
Ghee – 1 tbsp
Salt and water as required
For Raita
Curd – 1 cup
Beetroot – ¼ cup(grated)
Sugar – ½ tsp
Salt – 1 tsp
Red Chilli Powder – ½ tsp
Garnishing:
Corriander leaves
Method:
Add whole garam masala, ginger garlic paste and
green chilli to the ghee |
Add all the veggies, rice, water and salt and let it cook until done |
Wash and soak brown rice for 1 hour. In a cooker, add
ghee. Add whole garam masala, ginger garlic paste and green chilli. Now add the
vegetables and let it saute for a minute. Now add the rice and add 2 cups of
water. Add salt per taste. Now close the lid and let it cook for 15 – 20 minutes.

Add sugar, salt, red chilli powder in the curd |
Add grated beetroot and mix well |
For raita, add the above mentioned ingredents and mix
well.
Garnish with corriander leaves.
Serve hot brown rice biryani with raita.
