Roti Noodles

Usually when we have leftover rotis what do we do with that. Make upma or reheat it and have or ... we can turn that into noodles. Tasty and delicious and more importantly healthy. This is a great snack for kids or even for adults. You can add sprouts as well to this to make it even more healthy. So lets start cooking...


Ingredients:

Roti – 4
Mixed vegetable julianne – 1 cup(Carrot, Beans, Capsicum, Cauliflower)
Spring Onion – 3-4 Sprigs
Garlic – 2 pods
Green Chilli - 2
Soy Sauce – 1 tsp
Chilli Sauce – 1 tsp
Tomato Sauce – 2 tbsp
Vinegar – 1 tbsp
Salt per taste
Oil – 2 tbsp


Method:

Roll the rotis and cut it into thin stripes 
and keep it aside
In a kadhai heat oil and minced garlic, chopped
chillies, spring onions, mixed
vegetables and sauté
it

Add all the sauces, vinegar and salt
per taste.
Add roti stripes and mix well.

In a Pan or Kadhai add oil on a medium flame. Add minced garlic, chopped chillies, spring onions, mixed vegetables and sauté it in medium flame. Keep few greens of the spring onions aside. Now add all the sauces, vinegar and salt per taste. Mix well and cook for a minute. Now add roti stripes and mix well. Cook on a medium flame for 2 minutes and add the remaining greens. Serve hot.
