Corn N Spinach soup


Its PPCS time again. I know I'm little late but due to bad internet connection, was not able to post it on 28th. But as they say better late than never. This month I got to make Corn N Spinach soup by Nayana. Must say im really thankful to her as I thoroughly enjoyed it(even my little one). In Pune, the climate has been really cool throughout this month. So really enjoyed this simple yet healthy soup. Here's the recipe.... Hope you enjoy it... Happy cooking...



Ingredients :

Sweet corn kernels - 1 cup
Fresh Spinach leaves - 1/2 cup(finely chopped)
Onion - 1
Corn flour - 1 tbsp
Oil - 1 tbsp
Water - 3 cups + 1/4 cup
Salt to taste
Black pepper powder to taste


Method :

Heat oil in a thick bottom vessel and saute onion till translucent. Now add chopped spinach leaves and cook for another 2 - 3 minutes.


Now add the corn and 3 cups water and bring it to boil. 



Mix cornflour in 1/4 cup water and pour it in the boiling soup.
Stir continuously for 2 minutes. The soup will become thick. Season the soup with salt and pepper.




Boil fresh corn till tender and keep aside. Wash the spinach leaves thoroughly and chop them.

Now add chopped spinach leaves and cook for another 2 - 3 minutes.
Now add the corn and 3 cups water and bring it to boil. 
Mix cornflour in 1/4 cup water and pour it in the boiling soup.
Stir continuously for 2 minutes. The soup will become thick. Season the soup with salt and pepper.

Note : You can adjust the thickness of the soup by adjusting the cornflour used.

Cornmeal Choco Muffins

An apt pair for your tea time on a sunday evening. Soft and melt in mouth muffins made in healthy way. I have started experimenting with different flours in making cakes and muffins. This is one such experiment and it was wowlicious. I used cornmeal or makai ka aata. The muffins were soft and it melted in the mouth.  Do try it... Happy cooking...



Ingredients:

Cornmeal/Makai ka aata - 2 cups
Baking powder - 1 tsp
Baking soda - 1 tsp
Cocoa Powder - 2 tbsp(heaped)
Eggs - 1
Milk - 1 cup
Oil - 1/2 cup
Honey - 1/2 cup

Method:


Sieve the cornmeal, baking powder, baking soda and cocoa powder and combine them.


In a separate bowl, combine the milk, honey and oil and whisk. Add the egg and continue to whisk.



Add the flour mixture into the milk mixture until combined.


Put the mixture in the muffin moulds. If you are using non silicon moulds, then you have to grease it with oil/butter and dust it with little flour before putting the mixture in the moulds.


Cook for 13-15 minutes at 180 degrees.



Preheat the oven to 220 degrees.

Baby corn and Spinach Rice

Being a south indian there is no need to say that I am a big fan of rice. I keep experimenting and can make any rice in a jiffy. I will share all the rice varieties in the coming weeks, but here is one that is amazingly simple and you don’t need many ingredients for this. I like to keep it simple and simple this is. So happy cooking…



Ingredients:

Cooked Rice - 1 Cup
Baby corn - 100 gms
Spinach - 100 gms
Spring Onions - 3-4 stalks
Cumin Powder - 1/2 tbsp
Pepper Powder - 1/2 tbsp
Cloves - 3
Cumin Seeds - 1 tsp
Garlic - 2 pods
Chilli powder - 1/2 tbsp
Salt to taste
Oil - 3 tbsp

Method:

For baby corn rice

Add chopped garlic and spring
onion bulbs to oil
Add baby corn and fry for a minute


Add dry spices and mix well
Add cooked rice and spring onion greens and
mix well


First for baby corn rice, in a pan/kadhai put 1 1/2 tbsp of oil on a medium flame. Add finely chopped garlic and spring onion bulb(finely chopped) and saute for a minute. Now add chopped baby corn and fry for a minute. Now add cumin powder, pepper powder and salt. After 3 minutes add half of the cooked rice and mix well. Now add the spring onion greens and give it a final stir.

For Spinach rice:

In a pan add oil, cumin seeds and
cloves
Now add spinach puree, red chilli powder
   
Now add cooked rice 
Adjust seasoning and mix well


For Spinach rice, first blanch the spinach leaves and puree. In a kadhai/pan put the remaining oil and add cumin seeds and cloves. After they splutter, add spinach puree, red chilli powder and cook it for 2 minutes. Now add the remaining rice, adjust seasoning and mix well.

Now for presentation, layer baby corn rice and spinach rice alternatively and serve hot.
