My hubby dear(SM) was not feeling well :-( so I thought of cheering
him up by making this soup. Fully loaded with Vitamin C, which is good during
rainy season, this soup is super easy to make but healthy. You don’t need to
any thickening agent because carrots added in the soup acts as one. So this is
a perfect time to try this, happy cooking…
Ingredients:
Tomatoes - 250 gms
Carrot - 100 gms
Coriander leaves - 1 tbsp
Black Pepper 1 tbsp
Salt to taste
Water as required
Method:
Add tomatoes and carrots with 1 cup of water in a cooker and cook |
Once cooled, puree the veggies |
Sieve the puree |
Cook the sieved puree with seasonings |
Wash tomatoes thoroughly. Wash and peel carrots. In a pressure
cooker add tomatoes and carrots and add about 1 cup of water. Cook them for
about 15 minutes on a medium flame. Once cooled, puree tomatoes and carrots. Do
not add any extra water. Sieve the puree. Cook this on a low flame and add
seasonings and coriander leaves. Serve hot.
