Cornmeal Choco Muffins

An apt pair for your tea time on a sunday evening. Soft and melt in mouth muffins made in healthy way. I have started experimenting with different flours in making cakes and muffins. This is one such experiment and it was wowlicious. I used cornmeal or makai ka aata. The muffins were soft and it melted in the mouth.  Do try it... Happy cooking...



Ingredients:

Cornmeal/Makai ka aata - 2 cups
Baking powder - 1 tsp
Baking soda - 1 tsp
Cocoa Powder - 2 tbsp(heaped)
Eggs - 1
Milk - 1 cup
Oil - 1/2 cup
Honey - 1/2 cup

Method:


Sieve the cornmeal, baking powder, baking soda and cocoa powder and combine them.


In a separate bowl, combine the milk, honey and oil and whisk. Add the egg and continue to whisk.



Add the flour mixture into the milk mixture until combined.


Put the mixture in the muffin moulds. If you are using non silicon moulds, then you have to grease it with oil/butter and dust it with little flour before putting the mixture in the moulds.


Cook for 13-15 minutes at 180 degrees.



Preheat the oven to 220 degrees. 
Seive the cornmeal, baking powder, baking soda and cocoa powder and combine them. In a separate bowl, combine the milk, honey and oil and whisk. Add the egg and continue to whisk. Add the flour mixture into the milk mixture until combined. Put the mixture in the muffin moulds. Cook for 13-15 minutes at 180 degrees.
