Gajar ka Halwa

This is the season for fresh vegetables. Carrots is one such vegetable that you find in abundance this season. I learnt this recipe from my MIL. I did not knew the difference between Delhi Gajar and English carrots. I thought they were same. It is only after marriage that i came to know the difference. This is one easy and yet tasty and a traditional dessert. Usually served with ice cream. The hard part of this is grating the carrots but if you have food processor this halwa can be made in half hour to 45 minutes. You can add more sugar if you like it sweet coz I like it little less sweet. Also I used plain khoya. So do try this one, I bet this is really easy... Here is the recipe... happy cooking...

Ingredients:

Carrots - 1 kg( peeled and grated)
Khoya(plain) - 250 gms
Sugar - 8 tbsp
Dry fruits - for garnish

Method:

Wash and peel carrots. Add grated carrots in a pressure cooker. Cook for about 15 minutes on medium flame. Turn off flame and let the steam release on its own

Transfer the content to a kadhai and let it cook for about 10 minutes.

Once the water in the carrots are all evaporated, add khoya and sugar.  Add chopped dry fruits and cook until khoya leaves ghee.

Pineapple Halwa | Pineapple Sheera

I made this for Diwali. I made this on request of my DH's friend who came over for Diwali. I have not used any artificial color or essence. Added fruit as it is and it came out lovely. I have not added much sugar but you can add sugar as per your taste. You can even add nuts, I did not as I made it on Diwali and we already were high on calories that day.  I know I am posting it very late, but better late than never. So lets take a look at the recipe... Happy cooking...

Ingredients:

Semolina(rava/suji) - 1 cup
Pineapple(peeled and chopped) - 1 cup
Sugar - 4 tbsp
Ghee - 1/2 cup
Cardamom powder - 1/2 tsp
Water - 4 cups

Method:

Boil 4 cups of water with 4 tbsp of sugar until sugar is dissolved.

In a heavy bottom kadhai/pan add ghee.

Now add semolina and roast it until it turns golden brown.

Add chopped pineapple, cardamom powder and cook for about 5 minutes.

Now add the water and sugar mixture slowly. Make sure there are no lumps hence stir continuously till the water is evaporated and semolina is cooked. Switch off when you notice that ghee is leaving the sides of the pan.

Its my DH birthday and since I could not make cake, I thought I should make something that he will love. Hence I surprised him with Atta aur Gur ka halwa. I used gur (jaggery/vellam) instead of sugar. If you wish you can add sugar. I remember eating atta ke halwa in Golden temple and it was amazing. It had loads of ghee... I though of making it the same way hence I used ghee in good quantity.  However if you wish you can adjust the quantity of ghee according to your taste. Hope you try it... Happy Cooking...
