Lehsuni Aloo Palak

Potato curry is a regular at my place. You are out of veggies and got nothing to cook, Potatoes are saviour. Easy to cook and always tasty... So why not make it interesting. I added spinach and garlic and it was sooo good. You can have it with rotis, rice along with sambhar or with bread as a sandwich. So here goes the recipe... Happy cooking...


Serves - 2

Ingredients:

Potatoes - 250 gms
Spinach - 150 gms
Garlic - 8 - 10 pods
Chilli flakes - 1 tsp
Cumin seeds - 1 tsp
Turmeric powder - 1/2 tsp
Salt to taste
Oil - 2 tbsp

Method:


Heat 1 tbsp oil in a kadhai. Add cumin seeds and once they splutter, add chopped potatoes.

 

Add turmeric powder, chilli flakes and salt to taste and cook till done.


In another kadhai, add remaining oil and add garlic. 


 Now add chopped spinach. Cook it for a couple of minutes.


Now add the potatoes to the spinach and mix well. Check seasoning and serve hot.

Aloo Bread Sandwich

Most liked and loved sandwich. So easy to make and does not need elaborate preparations. I usually boil and keep potatoes a day before and it just takes 15 minutes for me to make my breakfast. So here is the recipe, happy cooking...



Ingredients:

Potato - 3(boiled and mashed)
Brown bread slices - 12
Onion - 1 (medium)
Green chillies - 2
Carrom seeds/Ajwain/Omam - 1 tsp
Salt per taste
Schezwan chutney - 4 tbsp
Mint chutney - 4 tbsp
Ghee/Oil/Butter for greasing

Method:



Boil and mash potato.


Add chopped onion, green chillies to the mashed potato mixture. 



Add carrom seeds , coriander and salt per taste and mix well.

Now keep the potato mixture on one of the slice.


Place another slice of bread, with the chutney smeared side facing downwards and press it lightly.




Place it in a greased sandwich toaster and cook using 1 tsp of butter, till it turns brown and crisp on both the sides.



Add chopped onion, green chillies to the mashed potato mixture. Add carrom seeds, coriander leaves and salt per taste and mix well. 
Take two slices of bread. Apply schezwan chutney to one and mint chutney to the other. Now keep the potato mixture on one of the slice 
Place another slice of bread, with the chutney smeared side facing downwards and press it lightly.
Place it in a greased sandwich toaster and cook using 1 tsp of butter, till it turns brown and crisp on both the sides. 
Repeat the same process with other slices.

Tip: You can add cheese to make this toast even yummier :-P

Aloo Paratha

This is the first breakfast dish that I made post marriage  This is when we shifted to Bangalore and were settling down. Today I made this dish and there is a hell lot of difference in the taste. I actually don't remember what all I added then. But being a south indian, I should say I am happy about the tastez. So here goes my recipe. Happy cooking...



Ingredients:

For dough:
Wheat flour – 2 cups
Salt as required
Water as required

For stuffing:
Potatoes - 3 (boiled and mashed)
Onion – 1 medium
Green chilli - 1 tbsp
Ginger - 1 tbsp(chopped)
Cumin seeds - 1 tsp
Carom seeds(Ajwain) – 1 tsp
Kasuri Methi - 1 tsp
Dry mango powder(amchur) - 1 tsp
Coriander leaves - 2 tbsp
Wheat flour for dusting
Salt as required
Ghee for cooking

Method:


Mix all the ingredients for stuffing
Take dough and flat it with a rolling pin

Put 1 1/2 tbsp of stuffing 
Close the stuffing and seal it 

Seal all the edges 
Roll it again with a rolling pin into a paratha


Place the paratha on pan and cook on
underside
Flip and cook for 2 minutes





Mix all the ingredients for dough and rest it for half hour.
For the stuffing mix all the ingredients together and mix well
Divide the dough into four portions. Roll it with rolling pin and flat it out a little. Put 1 ½ tbsp. of the stuffing and close it and roll it again. Now be very careful while rolling. Do not apply a lot of pressure as the stuffing can come out. 
Heat a pan (tawa) and drizzle a little bit of ghee and allow it to heat up on medium heat.
Place the paratha on the pan and smear a little ghee on top
Allow it to cook on the underside and then flip and cook.
Cook approximately 2 minutes on medium heat on both sides.
Remove from the pan and serve hot with curd and pickle.
