Veg Stir Fried Rice

This is my version of Indo-Chinese fried rice. I love quick recipes and this one tops my favorite list. And you know what i haven't used any sauces but still the flavor is amazing. 
This is a must try and you can use leftover rice to make this. A simple stir fry with veggies and voila amazing and nutritious treat is ready.

Ingredients :
2 cups of cooked rice
2 cups of mixed vegetables, chopped fine (use carrots, French beans, cabbage, capsicum) 
1 small bunch of spring onions, chopped fine 
1 tbsp of freshly minced garlic 
1 tsp of freshly cracked black pepper 
1-2 tbsp of oil 

2 tbsp Cumin powder
1 tbsp Chilli Flakes
Salt as per taste



In a skillet add minced garlic and spring onions. Add carrots, beans  and cook for a while.

Now add cabbage and capsicum. Add salt, cumin powder and  chili flakes.

Finally add cooked rice and mix well.

Method:

In a skillet heat oil and add minced garlic and spring onions. Reserve the greens for later use.
Once these are sauteed add cabbage, beans and carrots. Saute them for a while and then add capsicum and spring onion greens. Add salt, cumin powder and chilli flakes. Finally add cooked rice and mix them well.

Tips:

- Basmati tastes best for vegetable fried rice.


- Chop the vegetables fine otherwise the stir-frying won't cook them through and they will taste raw

- If you want to make Egg Fried Rice, add 2-3 scrambled eggs to this rice towards the end and you have easy Egg Fried Rice ready!
